Ingredients
1kg Butcher Co. USA style BBQ pork ribs
2 baby butternut pumpkin
Wickhams Farm Sweet Potato, peeled and chopped into chunks
Juice of ½ lime
3 TBSP Olive Oil
Salt and pepper
2 tsp Darling Fresh Wood Smoked Seasoning
Method
OVEN BAKED BBQ RIBS
Preheat oven to 160°C (140°C fan-forced). Remove ribs from packaging and place ribs in a large oven tray. Make sure you squeeze all the marinade out of the packaging and spread onto the ribs. and cover with foil. Cook for 1hr 30 minutes, basting every 30 minutes if you remember. Increase temperature to 200°C, remove cover and baste again. Add a little water if necessary. Bake for another 30 minutes or until browned. Remove from oven and let rest.
BAKED PUMPKIN & SWEET POTATO WEDGES
Cut pumpkin in halves and remove seeds. Cut each half into four wedges.
Peel & chop your sweet potato into chunks. Place on a flat baking tray lined with baking paper. Drizzle pumpkin wedges and sweet potato with olive oil, salt and pepper and spices.
Bake for 20-25 minutes until golden and cooked through.
