Sausages with Corn & Zucchini Salad

The sweet crunch of summer corn and crisp slices of zucchini are brightened with a zesty dressing.

Ingredients

4 zucchini
2 cobs corn
Juice of 1 lemon
Olive oil
Salt and pepper
½ cup chopped fresh coriander or herb of your choice
1 long red chilli, diced

Method

Cook corn in husks in the microwave for 3-4 minutes. Remove husks and cut  kernels off cobs. Cut zucchini into small dice (small size as corn kernels). 

Pour lemon juice into a serving bowl and add a good glug of olive oil. Season well and whisk to combine. Taste and add a little more lemon juice or salt if necessary. 

Place corn, zucchini and chilli into bowl and mix well to ensure all ingredients are coated with dressing. Sprinkle over coriander (or other herb) and serve immediately.
