Pumpkin & Orange Syrup Cake

Delicious, fragrant and full of yummy goodness.


1 cup mashed pumpkin (cold)
4 eggs, separated
250g butter
1 cup sugar
Rind of 1 oranges
2 cups GF plain flour
2 tsp baking powder
1 tbsp orange water
Good pinch of salt


Peel, deseed and dice 1 baby butternut pumpkin (should be enough to get 1 cup mashed pumpkin) Cook in microwave until tender then process in the food processor until smooth. Beat butter, sugar and orange rind until pale and fluffy. While beater is still running add egg yolks, a couple at a time until well combined.
