INGREDIENTS
500g potatoes, washed and quartered (skin on optional)
1 -2 teaspoons garlic finely chopped
Olive oil
Salt and pepper
METHOD
Preheat oven to 200 degrees. Cook potatoes in salted boiling water for 10-12 minutes until tender. Line a flat baking tray with baking paper and after draining potatoes, lay them out on the baking paper. Crush with a fork or potato masher, leaving some larger pieces. Drizzle with olive oil, garlic and season well with salt and pepper. Roast for approximately 20 minutes until crunchy and golden.
