400g beetroot3 eggs

150g dark chocolate buttons
1 cup brown sugar
2 tblsp rice flour or gf plain flour
70g cocoa
3 tsp baking powder
Method
Preheat oven to 180 degrees. Cut beetroot into 2cm cubes (with skin on) and place in a microwave proof bowl. Add a splash of water and cover with cling
wrap. Cook on high for 8-10 minutes until beetroot is tender. Drain water and place beetroot in a food processor with the chocolate buttons (the heat from the beetroot will help melt the chocolate). Process until all the chocolate has melted and the beetroot is cut finely. Using electric beaters, mix together egg and brown sugar until light and pale coloured (this will take about 5 minutes). Add rice flour, cocoa and baking powder and mix together well. Add beetroot chocolate mixture and mix well. Spoon into a 12 hole greased muffin tray and bake for 15 -20 minutes until firm.
