Carrot Cake Cookies

These Carrot Cake Cookies are soft, chewy, and all so delish!

Ingredients

1 cup rolled oats
1 cup almond meal
¾ cup sugar
½ cup plain flour
1 tsp baking powder
1 tsp ground cinnamon
½ tsp ground ginger
1 cup roughly chopped pecans
1/4 cup dates
1 ½ cup grated carrots
1 egg
½ cup olive oil

CREAM CHEESE FROSTING
125g cream cheese
1 tsp grated lemon rind
2 cups icing sugar


Method

Preheat the oven to 180C. Place oats, almond meal, sugar, flour, baking powder, cinnamon, ginger, pecans, and dates in a large mixing bowl. Add carrots, egg, and oil. Mix to combine. Make 12 heaped tablespoons of the cookie dough and place them onto a large baking tray. Bake for 25 minutes or until golden. Allow cooling.

To make the cream cheese, please cream cheese, lemon rind and icing sugar into a food processor and blend until smooth. Sandwich the cookies together with the frosting in the middle before serving.
