Bacon & Egg Breakfast Burgers

 Eat it for breakfast or just eat it full-stop.


4 rashers bacon
4 eggs
½ red onion finely sliced
Olive oil
4 burger buns
4 slices cheese
Good quality mayonnaise
½ tomato relish
2 large tomatoes, sliced (8 slices in total)
4 frilly lettuce leaves



Heat a large frypan on medium heat, add a little olive oil and when hot fry bacon  until cooked and a little crisp. Remove and place into a dish covered with foil to keep warm Fry eggs to your liking in the same frypan. Cut burger buns in half and spread bottom with mayonnaise and the top with tomato relish. To the bottom half add lettuce leaf, bacon rasher, cheese slice, fried egg, tomato (season tomato with a little salt) and onion. Place on burger top. Serve immediately.
