A traditional Italian recipe that takes time and the best ingredients Sally at The Pickling Project can source.  The herbs are straight from the garden, the eggplant is in season and abundant throughout the hot days in South East Queensland.  We source the vinegar from the Granite Belt and the garlic is new season. 

Serve this on an antipasto platter or in a toasted panini with baby spinach, cheese and hot salami.

Ingredients: Eggplant, white wine vinegar, olive oil, salt, garlic, fresh herbs, chilli.
