So easy, so delicious. These stuffed mushrooms are a taste sensation. Perfect for breakfast or a light dinner.
- 4 large flat mushrooms & 2 button mushrooms from Canungra Mushrooms
- 2 x The Butcher Co bacon rashers
- 100gms Scenic Rim 4Real feta
- chives finely chopped
Preheat oven to 180 degrees
Dice button mushrooms, flat mushroom stalks and bacon rashers
Crumble feta and half chives into bacon and mushroom mixture
Spoon mixture into inverted flat mushrooms on a lined flat baking tray
Drizzle with olive oil and season with salt and pepper to taste.
Bake in oven for 20 minutes or until feta & bacon are golden
Garnish with remaining chives and serve.
