Baked Brie - two ways

Baked bries are the perfect winter appetiser. 

Here's two of Kate's favourite ways to bake bries.

Honey & Rosemary Baked Brie

Ingredients

  • 1 x Scenic Rim 4Real Triple Cream Brie
  • 2 tablespoons of local honey
  • 1 x sprig Riverdale Herbs Rosemary
  • salt

Method

Preheat oven to 180 degrees 

 

Place the brie in an oven proof ramekin lined with grease proof paper.

Score the top with a sharp knife and drizzle one tablespoon of honey, sprinkling of salt and then place some rosemary sprigs into the scores.

Bake for 20-25 minutes.

Remove from ramekin to serve with and extra drizzle of honey, rosemay sprigs and salt.

Serve with your favourite bread and/or crackers. 

Bacon & Chive Baked Brie

Ingredients

  • 1 x Scenic Rim 4Real Triple Cream Brie
  • 2 rashers The Butcher Co double smoked bacon
  • 1/2 x bunch Riverdale Herbs Chives
  • salt & pepper

Method

Preheat oven to 180 degrees 

Remove rind from bacon and then pan fry or grill whole rashers until crispy. Set aside to cool.

Place the brie in an oven proof ramekin lined with grease proof paper.

Score the top with a sharp knife and add sprinkling of salt before baking for 20-25 minutes.

While it's backing crumble the bacon into small pieces and chop chives finely.

Remove brie from oven and ramekin to serve with topped with bacon crumble, chives and freshly cracked pepper and salt to taste. 

Serve with your favourite bread and/or crackers.
